Recipe - Tangy Grilled Salmon on Cauli Mash

A tasty, healthy meal and quick meal perfect for weight loss, busy people or general healthy eating.


What is so good about Salmon? Salmon contains Omega-3 fatty acids which are a family of polyunsaturated fats associated with several health benefits. Omega 3 lowers blood pressure, reduces triglycerides in the blood, helps reduce joint inflammation in rheumatoid disease, great for brain, eyes and mood, helps asthma, migraine, and diabetes, and may reduce the risk and prevent heart disease and ischemic stroke. Fatty fish is the best source of Omega 3 so is great to incorporate into your diet 2 times per week.




TANGY GRILLED SALMON ON CAULIFLOWER MASH

Serves: 2

Ingredients:

  • 2 x 100g fillets of salmon

  • 2 tbsp. olive oil, plus ¼ cup for vinaigrette

  • Course sea salt

  • 1 lemon, halved

  • 1 tbsp. finely chopped dill

  • Freshly ground pepper

  • ½ head of cauliflower florets, cut into chunks

  • 1 garlic clove, crushed

 

Instructions:

  1. Heat grill or pan over high heat.

  2. Coat fish with the olive oil and sprinkle with salt.

  3. Grill until firm to touch and browned, about 4 minutes on each side.

  4. Grill lemons at the same time for the dressing! Grill them alongside the salmon, cut side down, until they soften and begin to char.

  5. Meanwhile prepare cauliflower mash: Steam Cauliflower until soft.

  6. Place cauliflower, garlic and oil into a food processor and blend until smooth and creamy. May need to add a little milk (preferably almond milk) if mash is not combining.

  7. Transfer salmon to serving plates and let it rest while you prepare the dressing.

  8. To make dressing – Squeeze the grilled lemons into a bowl.

  9. Whisk in ¼ cup olive oil, stir in parsley and season to taste with salt and pepper.

  10. Pour dressing over salmon and serve with cauliflower mash
